For several years, the apparently beneficial effect on health of lemon and lime has earned them a resurgence of interest from consumers. Indeed, with an increase of 15 % between 2013 and 2016, world trade of lemon has taken off to reach a record level of 1 900 000 tonnes in 2016. Thus, between 2013 and 2016, in Western Europe, consumption has increased by 300 grams per inhabitant and per year (reaching on average 1.8 kg per inhabitant per year) and even more in Eastern Europe (+400 grams, thus on average 2.3 kg per inhabitant and per year). Likewise, lime trade sees also a significant development: consumption has almost doubled in Western Europe to reach an average of 460 grams per capita per year.
